French Toast with Blueberries

Today I have breakfast recipe for you, the utterly delicious French toast with Greek yogurt and blueberries. This is so warm and filling and full of good stuff, perfect for a cold day to get you started and feels so indulgent but is thankfully short on "baddies" like refined sugar. You will need (per person): 1 egg 1 slice of granary bread (I failed to use granary for my pic because I had run out and was forced to use regular white 😒) A splash of milk 1 teaspoon of vanilla extract 2 teaspoons of maple syrup Half teaspoon of cinnamon powder Couple tablespoons Greek yoghurt Squeeze of honey (optional for the yogurt if you prefer a little more sweetness) Handful of blueberries Some kind of oil for frying of your choice (I use coconut oil) Start off by whisking the egg and milk together in a jug, then add the vanilla, maple syrup and cinnamon.
